Veggie Stuffed Peppers Recipe
Ingredients:
1 Tbsp of oil (olive)
2 garlic cloves; chopped
Salt
3 onions (green); chopped finely
3 peeled ripened tomatoes (small); seeded & chopped
8 different bellpeppers; roasted & peeled
1 Tbsp of dry basil
1/4 tsp of ground pepper (black)
1/2 c of grated cheese (Parmesan)
1/2 c of chopped frozen kale; thawed & dried
1/2 tsp of salt
1 lb of smoked Swiss of Mozarella cheese; sliced into 8 sticks (1/4-inch x 1/2-inch)
Instructions:
For the sauce; Have oil heated in thick medium-sized skiilet placed over mid-heat. Add onions then cook them for 5 mins. Stir occasionally ’til soft.
Add the garlic & cook for 1 more min. Add the tomatoes then reduce the heat & simmer it for about 10 mins, stir occasionally ’til sauce is thick. Season w/ salt.
Fore the peppers: Preheat oven into 375 degrees F. Grease one 2-qt shallow bake dish w/ oil. Create one 2-inch slit along sides of pepper individually.
Remove seeds then pull the pulp. Have them rinsed & dried. Mix basil, kale, pepper & salt. Place a strip of cheese & 1 Tbsp of kale mix in every pepper.
You arrange the peppers beautifully in 1 layer into greased dish w/ filled portion up. You pour the sauce over then sprinkle w/ Parmesan.
Have them baked for 45 mins ’til browned lightly.
