Turnip Greens Recipe
Ingredients:
4 & 1/2 lbs of turnip-greens
3 qts of water
1 lb of salt-pork
1/4 tsp of pepper (black)
Instructions:
Discard removed stems & discolored parts of turnip. Wash them thoroughly then drain well. Tear them into pieces then set them aside.
Cut the pork-salt at one-inch intervals, avoid penetrating thru skin. You combine them w/ 3 qts water, sugar & pepper. Pour into Dutch-oven.
You let mixture boil. Have it covered then reduce the heat. Simmer for an hour. You add the greens then cook w/o cover for 30-35 mins more ’til tender.
