Sweet Cheese Fritters Recipe
Ingredients:
4 c of large-curd cheese (Cottage cheese)
4 pcs of egg yolks (large)
1/3 c of flour (soy)
1/3 c of flour (oat)
1/4 tsp of salt
5 Tbsps of sweetener (Splenda)
1 tsp of DiabetiSweet (or KetoSweet)
8 Tbsps of butter; melted
1 c of sour cream
Instructions:
Drain cheese on the colander then cover with towel to push it down. Let it drain for 2-3 hours, undisturbed. Pass drained cheese through the sieve and onto a mixing bowl. Add the yolks individually; beat thoroughly.
Add flours, sweetener, and salt, while constantly beating. Shape mixture equally into four balls. Individually, place balls onto a lightly floured board then form into 3 or 4 inch long cylinders, like a sausage. Wrap the cylinders individually in parchment paper; refrigerate for half an hour.
Cut them to 1-inch-wide rounds. Place four tablespoons of butter inside a skillet above medium heat. Once melted, add 6-8 rounds; fry for 3-5 mins per side till golden. Place onto a warm platter. Do the same to all, add more butter as necessary.
Serve them hot along with (sour) cream.
