Spinach Stuffed Eggs Recipe
Ingredients:
12 pcs of eggs (hard boiled); peeled
10 oz of spinach (frozen, chopped)
1/4 c of mayonnaise (sugar free)
2 Tbsps of oil (olive oil)
2 Tbsps of Parmesan (freshly grated)
Salt (to taste)
Black pepper (freshly ground, to taste)
Instructions:
Cook spinach then drain thoroughly, squeeze out excess moisture. Cut the eggs into half then get the yolks; mash them with mayonnaise, spinach, oil, salt, pepper, and cheese. Fill the whites with mashed mixture. Place inside the refrigerator, covered, till well-chilled.
