Spinach and Egg Scramble Recipe
Ingredients:
3 Tbsps of oil (peanut oil)
1 pc of onion (medium); chopped
1 lb of lean beef (ground)
1 lb of spinach (blanched); drained then chopped
Salt (to taste)
Hot sauce (Tabasco)
4 pcs of eggs; beaten lightly
4 Tbsps of grated cheese (Parmesan)
Instructions:
Heat oil on a skillet above moderate heat then add onion; saute till tender. Add beef and stir constantly to crumble; cook till browned then add spinach. Mix thoroughly then cook for 3-4 mins, while stirring constantly. Season salt.
Combine eggs and hot sauce; mix thoroughly and pour onto the mixture of beef. Cook till eggs have cooked through, while stirring constantly. Take out from the heat and transfer onto a warmed plate. Sprinkle Parmesan cheese.
