Spicy Tofu with Bokchoy Recipe
Ingredients:
1 Tbsp of peanut oil
9 c of bokchoy; cut crosswise & drained after rinsing
1 c of sliced onions (green)
1 minced Jalapeno
3 Tbsps of water
1 Tbsp of sauce
1 lb of tofu (firm) at room temp; sliced into cubes
1 Tbsp of dark sesame-oil
4 c of sliced caps of shitake mushrooms
2 garlic cloves; minced
1 Tbsp of grated ginger
2 Tbsps of soysauce
1 tsp of granular sweetener
Instructions:
Have oil heated in large skillet placed over high-heat. You add mushrooms & bokchoy, stir-fry for 5 mins ’til crisp & tender.
Add onions, Jalapeno, ginger & garlic, continue stir-frying fro 1 & 1/2 mins. Separately mix soysauce, water, sauce & sweetener. Stir this into bokchoy mixture then top w/ tofu.
Cook w/ cover for 1 min ’til thoroughly heated.
