Sicilian Vegetable Stew Recipe
Ingredients:
2 pounds of medium eggplants
1/2 pound of thinly-sliced onions
1 pound of seeded ripened tomatoes; sliced into strips
2-3 stalks of celery; chopped
1/3 c vinegar
Salt
1/3 c of oil (olive)
2 Tbsps of drained capers
6 ounces of olives
1 tsp of artificial sweetener
Instructions:
Have your eggplants washed then cut into smaller pieces. Place them in strainer then sprinkle w/ salt. Allow to drain for an hour.
Combine onions w/ 1/3 olive-oil in shallow, wide pan. Let it cook ’til golden. You then add capers, tomatoes, olives & celery. Mix very well then cook about 15 mins then set it aside.
You rinse your eggplant & completely dry. Have the rest of oil heated in your skillet that is placed over high-heat. Once its very hot, add your eggplant pcs then fry ’til browned, then drain.
Add eggplants into tomato mix. Sprinkle w/ sweetener & vinegar then return it to low-heat. Cook ’til vinegar evaporates.
