Sausage Frittata Recipe
Ingredients:
1/2 pc of onion; finely chopped
1/2 c of cheese (Ricotta)
2 cloves of garlic; minced
1/4 tsp of cayenne
1/2 c of cream (heavy)
4 pcs of eggs
Dash of salt
1 c of cheese (Cheddar); shredded
1/4 c of salsa
8 ozs of sausage
Instructions:
Preheat oven (350 degrees F). Inside a 10″ oven safe skillet, saute garlic and onion.
Add the broken-up sausage then cook ’til no trace of pink color remains, mincing it while it is cooked. Pour excess fat off, if necessary.
Beat ricotta, cream, seasonings and eggs inside a mixing bowl. Put in salsa.
Next, pour the mixture on the eggs and bake about 20 mins or ’til most of the eggs are set. Don’t overcook so eggs do not turn tough.
Remove skillet from oven then top w/ cheese then put below a broiler ’til cheese will melt and becomes golden. Let it stand and cool before cutting. Serve w/ dollop of sour cream (recommended but optional) and serve w/ salad for supper. Good for 4, each containing 42 g of Fat, 6 Carbohydrates, a gram of Fiber and 535 Cal.
