Roasted Cabbage with Bacon Recipe

Ingredients:

2 lbs of cabbage head (green); stemmed
1 Tbsp of olive oil (extra virgin)
4 oz of bacon (good quality slab); cut to 1/4 inch cubes
Salt (coarse, sea)
Vinegar (red wine or lemon wedges)

Instructions:

Remove outer layer from cabbage then cut into half; cut evenly each of halves to 3 wedges. Place wedges of cabbages on a greased cooking sheet, about an inch apart. Scatter bacon above cabbage.

Place inside the oven then roast them 20 to 30 mins; turn them over then roast again for 20 to 30 more mins. Discard dried leaves on its outer layer. Sprinkle salt then serve at once with wedges of lemon or vinegar.
