Pork Roll Ups Recipe

Ingredients:

8 pcs of cutlets of pork (or thinly pounded deboned chops)
1 pc egg; beat w/ half a cup of water
8 links of sausage (Bob Evans or Jimmy Dean)
1 c of pork-rinds; crushed
Tomato sauce (8 ozs, low-carbohydrate, sugar free)
1/8 tsp of pepper (white)
3/4 c of cheese (Mozzarella, Cheddar, Swiss); shredded

Instructions:

Preheat the oven (325 degrees F). Saute the sausage ’til browned lightly. Place a link inside every cutlet then roll it up; tuck the pork ends to create pouch and hold it together w/ a pc of toothpick. Next, dip into egg then roll into crushed rinds of pork.

Refrigerate for 1 hr or more to keep the roll together. In baking pan, arrange rolls, cover w/ sauce then sprinkle w/ cheese. If desired wrap each roll with foil then turn once while baking. Over 325 degrees F, bake for 1 hr ’til done and remove the toothpicks when rolls are served.

Serves 8; Carbohydrate – 2 g/serving.
