Pork Roast With Bourbon Sauce Recipe
Ingredients:
1 Tbsps of sage (fresh or 1.5 tsps if dried); chopped finely
2 tsps of garlic; minced
1/2 tsp of salt
1 tsp of thyme (dried)
2 tsps orange peelings; grated finely
1/2 tsp of pepper (black); ground fresh
2 lbs of pork (boneless loin); trimmed
1.5 c of water
1/2 c of bourbon
1 c of chicken stock (reduced sodium)
1/2 c of cream (heavy)
Instructions:
Preheat oven 375 degrees F. Meanwhile, spray roasting shallow pan w/ non stick spray (vegetable). On chopping board, mix garlic, sage, orange peelings, salt, pepper and thyme. With use of paring knife, press mixture and mash w/ flat-side of the knife in order to create paste.
Then, rub the paste on pork’s surface. Put the pork’s fat in a pan. Next, add in 1 c of water into pan then roast for 30 mins. Turn the pork; if pork is dry, add the remaining half cup of water in.
Roast for 30 – 40 mins more ’til meat temperature shows 160 degrees F (medium) or 170 degrees F (well done) when thermometer is inserted to the pork’s center. Transfer the pork into a chopping board. Next, cover w/ foil loosely then let it stand while you are making a sauce.
For sauce, put in chicken stock into a roasting shallow pan then bring it to boil on mid-high heat. Scrape off the bits that have browned from the pan. Next, add cream and bourbon.
Boil, frequently stirring, ’til sauce will reduce to 3/4 c or ’til it will lightly coat the spoon’s back, approximately 10 mins. Slice the roast then serve w/ sauce. Serves 6, each containing 1 1/2 g of carbs, 23 g of fat and 395 calories.
