Pork Rillettes Recipe
Ingredients:
2 lbs of pork butt (1/3 fat); cubed to 1.5 inch
2 c of onion; diced finely
12 pcs cloves of garlic (medium); crushed or minced
2 pcs of thyme sprigs (large)
2 tsps of salt
1-1/2 tsps of pepper (black, cracked)
1/2 tsp of allspice
1/2 tsp of pepper (white)
1 c of wine (white)
2 pcs of bay leaves
Instructions:
Combine the pork butt, onion, garlic, thyme, salt, peppers, allspice, bay leaves and wine inside a saucepan. Cover then let it simmer above moderate heat. Place inside the oven at 250 degrees F then continue cooking for 1.5-2 hours. Add more of wine when necessary to keep from drying.
Once cooked, discard bay leaves and thyme then crush meat using fork. Adjust the seasoning then serve at once.
Note: If to be used later, store inside refrigerator for ten days maximum but add a very thin slice of pork or chicken fat above the mixture.
