Oven Style Scotch Eggs Recipe
Ingredients:
1 lb of lean turkey (or pork, ground)
1/4 c of flour (soy, oat, or Atkins Bake Mix)
1/4 c of pork rinds; crushed finely
8 pcs of eggs (hard boiled)
1/3 c of breadcrumbs (low carb)
1 pc of beaten egg
Instructions:
Preheat the oven at 375 degrees F. Divide the ground meat into eight portions, about 2-ounces each. Combine flour and crushed (pork) rinds; mix thoroughly and sprinkle onto a surface. Pat the meat portions on the sprinkled surface into 1/8-inch thick.
Wrap them around the eggs, covering completely. Roll the meat stuffed egg on breadcrumbs then dip on (beaten) egg. Arrange them on greased cooking sheet. Bake inside preheated oven till slightly browned, or about twenty mins.
