No Noodle Lasagna Recipe
Ingredients:
2 lbs of lean beef (ground); browned on olive oil
1/2 pc of onion (small); diced
1/2 pc of bell pepper (red or green); diced
15 to 16 oz of cheese (Ricotta)
2 pcs of eggs (large); beaten lightly
8 oz of tomato sauce
1/2 can of paste (tomato)
1/2 c of wine (red, dry)
2 Tbsps of seasoning (Italian)
1/2 tsp of fennel seed
Parsley (fresh); chopped
5 pcs of mushrooms (large); sliced thinly
2 pcs of zucchini (medium); sliced lengthwise
1 lb of spinach (steamed)
Salt & Pepper (to taste)
1 to 2 pcs of garlic coves; crushed
8 oz of shredded cheese (Mozzarella)
1/2 c of shredded cheese (Parmesan)
Instructions:
Brown meat on two tablespoons of (olive) oil. Add (bell) pepper with onions; saute till tender. Add garlic then continue to cook till onions become translucent. Add the tomato (paste and sauce) and wine; stir thoroughly then add the seasonings.
Let it simmer till thick. Combine Ricotta and eggs; beat thoroughly and add salt, parsley, and black pepper. Heat the oven at 325 degrees F. Spray nonstick vegetable cooking oil on the base of a baking pan.
Spread half the mixture of meat on the base then arrange the zucchini on top then spread the mixture of Ricotta. Place slices of mushroom and spinach on top. Pour over half the shredded cheeses and cover remaining mixture of meat. Spread remaining shredded cheeses on top.
Bake inside the preheated oven till cheese becomes golden and bubbly, about 35-45 mins.
