Marinated Loin of Pork Recipe
Ingredients:
2 – 3 cloves of garlic (large)
2 tsps of salt
6 Tbsps of olive oil (extra-virgin)
1/2 tsp of rosemary (dried)
1/2 tsp of thyme (dried)
1/8 tsp of allspice (ground)
1 pc of center boneless pork loin roast (3 – 3 1/2 lbs); rolled & tied
Instructions:
To make the marinade, crumble fine pcs of garlic then sprinkle w/ salt. Using a knife’s flattened blade, press garlic. Continuously mince and press ’til mixture has turned to a puree. Next, crush thyme and rosemary in separate bowl.
Then, add allspice, olive oil and the garlic mix; blend thoroughly. Unroll roast then brush the sides w/ marinade. Next, roll then tie w/ a heavy piece of string preferably cotton. Put roast along with what is left of the marinade inside a pc of plastic container or bag.
Then, close the bag then place it inside a bowl. Chill overnight, occasionally turning. Bake roast uncovered over 325 degrees F for about 1.5 – 2 hrs or ’til meat temperature becomes 170 degrees F when checked using a thermometer. Let it stand for 10 -15 mins before it is carved. Good for 8 to 10; serving has carb traces.
