Egg Champignons Recipe
Ingredients:
24 pcs of mushrooms (fresh, large); stemmed
6 pcs of eggs (hard boiled); peeled and chopped finely
1/4 c of breadcrumbs (low carb, very fine)
1/4 c of crumbled cheese (Blue)
2 Tbsps of scallions; chopped finely
2 Tbsps of wine (white, dry)
or
2 Tbsps of broth (chicken)
2 Tbsps of melted butter
1 Tbsp of snipped parsley (fresh)
or
1/2 Tbsp of parsley flakes
1/2 tsp of salt (garlic)
Paprika
Instructions:
Preheat the oven at 450 degrees F. Combine eggs, breadcrumbs, onion, cheese, butter, wine, salt, and parsley inside a bowl; mix thoroughly and fill a spoonful onto each of mushroom. Place the filled cap of mushroom onto slightly greased cooking sheet.
Place inside preheated oven and bake for 8-10 mins. Sprinkle paprika.
