Citrus Marinated Pork Chops Recipe
Ingredients:
2 pcs of dried chiles (chipotles)
6 pcs of pork chops (loin or rib, 1/2-inch thick)
1/2 c of frozen juice (orange); thawed
1/4 c of oil (vegetable oil)
1/4 c of juice (lemon)
2 Tbsps of orange zest; grated
1 Tbsp of salt
1 pc of garlic clove
1 pc of orange (for garnish); cut to six wedges
Instructions:
Cover water onto the chiles then let it stand for an hour till softened; drain then chop them finely. Place the chops onto shallow dish. Combine the chiles, thawed juice, oil, lemon juice, orange zest, salt, and garlic inside the blender; blend gently till smooth and pour onto chops. Place inside the refrigerator, covered, for three hrs; spoon marinade onto chops from time to time.
Grill or broil chops, 3-5 inches away from heat, for 10 mins till slightly browned. Turn chops then brush them with its marinade. Grill or broil till done, or for another 5 mins. Garnish fresh wedges of orange.
