Chicken and Coconut Milk Curry Recipe
Ingredients:
2 Tbsps of veggie oil
3 pcs cinnamon sticks (1 & 1/2-inc)
8 pods of cardamom (whole)
1 Tbsp of freshly grated ginger
1 can of coconut-milk (14 ounces)
1 & 1/2 tsps of whole peppercorns (black)
10 cloves (whole)
3 dry chilies (red)
8 thighs of chicken; skinned
Salt
Instructions:
Have oil heated in thick pot placed over high-heat. Add peppercorns, cloves, cinnamon, chilies & cardamom. Stir well ’til cardamom starts to darken.
Add ginger, stir then add meat & coconut-milk, season w/ salt. Add water enough to cover meat then boil. Reduce heat then simmer w/o cover for about 40 mins ’til sauce thickens. Season w/ salt & squeeze in lime juice.
