Chicken and Beef Satays Recipe
Ingredients:
1 c of thick cream
5 cloves garlic; chopped
1 & 1/2 tsps of cumin (ground)
1 & 1/2 tsps of salt
8 oz rib-eye steak; trimmed & cut to 1/2-inch strips
1/2 onion (small); chopped
4 tsps of powdered curry
1/2 tsp of cayenne-pepper
1 chicken-breast (skinless & boneless); cut to 1/2-inch strips
1/3 c of sugar-free peanut-butter
1 clove garlic
2 Tbsps fresh juice of lime
1 pack of artificial sweetener
1/3 c of water
2 Tbsps of soysauce
Instructions:
Have the skewers soaked in ice water about 20 mins. Combine the cream, garlic, onion, powdered curry, salt, cumin & cayenne, blend ’til smoothened. Have it transferred into bowl then add the beef & chicken strips, then toss well to evenly coat. Marinate covered at room-temp for 15 mins.
Sauce: Combine peanut-butter, juice, garlic, water, soysauce, sweetener and cayenne-pepper in bowl, blend well ’til smoothened.
Have the broiler heated. Thread beef & chicken strips into skewers. Arrange on greased racks in broiler-pan then broil for 5 mins ’til cooked, turn once. Serve w/ sauce.
