Cheesy Chicken Casserole Recipe
Ingredients:
6 chicken-breast halves w/ bone & skin
1 c of cream
16 oz of cheese (Mascarpone)
3/4 tsp of garlic seasoning
10 oz pack of chopped frozen brocolli
1 c of half-and-half mixed w/ water
1 tsp of salt
1 & 1/2 grated cheese (Parmesan); divided
1 small chopped onion
1 tsp of salt
1 bayleaf
2 garlic cloves
3 celery tops
Instructions:
Have meat simmered in water enough to cover it ’til tender. Add onions, salt, bayleaf, celery & garlic into water. You remove meat then cool.
Have the skin discarded & bones as well. Slice meat thinly then cover & refrigerate. One hour prior to serving, you cook & drain the brocolli then arrange it in bottom-part of oiled 2-qt dish.
You preheat the oven (350 degrees F). Place double-boiler over heated water then blend half-and-half, cream, garlic seasoning, salt & mascarpone ’til heated well & smooth.
Add 3/4 c Parmesan. You pour one cup of cream-sauce over the broccoli then top it w/ layer of chicken. Have it covered w/ remaining sauce then sprinkle w/ 1/4 Parmesan.
Have it baked for 30 mins at 350 degrees F. Cool before you serve then pass w/ remaining of Parmesan.
