Cheese Souffle Recipe

Ingredients:

1/4 c of grated cheese (Parmesan)
4 Tbsps of butter (unsalted)
2 Tbsps of flour (soy)
2 Tbsps of pastry flour (whole grain)
3/4 c of cream (heavy)
2 c of grated cheese (Cheddar)
3/4 c of water
1/4 tsp of salt
6 pcs of eggs (large)
1/8 tsp of cayenne pepper

Instructions:

Heat the oven at 350 degrees F. Butter a 2-qt souffle dish and sprinkle with half the Parmesan. Melt the butter inside a saucepan above medium heat. Add flours and mix thoroughly.

Gradually add water and cream; stir constantly. Add the remaining cheeses, cayenne, and salt. Let mixture boil while constantly stirring. Take out from the heat then add the yolks individually, while continuously beating.

Beat the whites of egg till stiff; fold onto the mixture of cheese in 3 additions. Carefully pour the mixture onto buttered dish. Place inside preheated oven and bake for 40-45 mins. Serve at once.
