Cheese & Beer Soup Recipe
Ingredients:
6 c of broth (chicken)
1 c of onions; chopped
A bottle of low-carb or lite beer
2 Tbsps of olive oil
3/4 c of celery; diced into small cubes
1/2 tsp of mustard
A dash of Worcestershire sauce
A dash of Tabasco
A dash of pepper (ground)
1 c of cheese (Cheddar, extra-sharp); diced or shredded
1 pound of Bavarian or Polish sausage
Instructions:
Saute the onions and celery into 2 Tbsps of oil ’til onion will wilt. Then put broth in and then boil. Cover and simmer for 45 mins to an hour. Put cheese into soup.
Do not stir mixture a little while so cheese will be broken up. Add all the remaining ingredients and then heat ’til sausage becomes cooked and hot. Serves 6; each containing 3 Carbohydrates.
