Cheddar Cheese Soup Recipe
Ingredients:
2 Tbsps of butter
2 Tbsps of flour (soy)
1/4 c of onions; chopped
3 c of stock (chicken)
1/4 c of celery; chopped
A pinch of nutmeg
A pinch of pepper
1/4 tsp of mustard (dry)
1.5 c of cream (heavy)
1 c of water
1.5 c of cheese (Cheddar); shredded
A dash of Worcestershire sauce
Instructions:
Inside a saucepan, soften the butter, then cook celery and onion for 5 mins or ’til tender; don’t brown. Put in mustard, flour, pepper and nutmeg; cook about 2 – 3 mins. Put in the stock and simmer approximately 20 mins of ’til tender. When desired, slowly puree into a blender ’til smooth.
Put in water then cream; bring mixture to boil. Then, add in cheese and heat ’til melted a bit and constantly stir. Add in Worcestershire then a bit of salt. Serves 6; contains 292 Cal and 2 Carbohydrates each.
