Lamb & Vegetable Stew Recipe
Ingredients:
1/2 c of Bake Mix (Atkins)
1 tsp of salt
1/2 tsp of pepper
2 lbs of lamb meat (stew)
2 Tbsps of oil (olive oil)
2 pcs of garlic cloves; crushed
1 tsp of oregano (dried)
6 oz of tomatoes (canned, diced)
1/2 c of water
1 Tbsp of vinegar (red wine)
1 pk of sweetener
2 c of green beans; cut into 1-inch pieces
2 pcs of small squash (yellow, or zucchini); cut into 1-inch pieces
Instructions:
Combine salt, pepper, and bake mix on a dish; dredge the pieces of lamb on it. Heat the oil inside a (Dutch) oven above moderate heat then brown the lamb, by batches, and transfer onto a dish. Add oregano and garlic to the pan and cook for a min, while stirring constantly.
Place the lamb back in the pan then add water, tomatoes, sweetener, and vinegar. Let it boil then reduce the heat into gentle. Simmer for 75 mins till lamb turns almost soft. Add the squash and beans then mix thoroughly. Cook for additional 15 mins, covered partially.
