Cranberry Ginger Pork Roast Recipe
Ingredients:
4 lbs of pork loin roast (bone-in)
1 c of cranberries (fresh or frozen); chopped coarsely
1/4 c of Atkins syrup (pancake, sugar free)
1 can of chipotle (chipotle en adobo); chopped
2 tsps of ginger (fresh); grated
1/2 tsp of salt
1/4 tsp of pepper (freshly ground)
Instructions:
Combine cranberries, chipotle, syrup, salt, pepper, and ginger inside a bowl then mix thoroughly. Place the roast on a (slow) cooker then rub them with the mixture and cover. Cook for 8-10 hrs at low setting.
