Cheese & Chicken Quesadillas Recipe
Ingredients:
1 c of shredded cheese (Monterey-Jack)
8 pcs tortillas (Atkin’s whole-wheat)
2 redpeppers (roasted); pat dry then sliced into thin strips
2 Tbsps of chopped cilantro (fresh)
1/4 c of sourcream
8 oz of cooked chicken-breast; shredded
3 onions (green); sliced thinly
Instructions:
Mix together sourcream & cheese. You spread this mixture all over 4 tortillas then leave a 1/2-inch border.
Divide the chicken evenly including cilantro, peppers & onions over cheese-mixture. Have it covered w/ remaining pieces of tortilla.
You heat 2 large-sized stick-free skillets placed over mid-heat for 2 mins. Cook the quesadillas for 2-3 mins for every side, carefully turn using your spatula.
You cut your quesadilla into four.
