Candied Ginger Sweet Potatoes Recipe
Ingredients:
4 peeled potatoes (sweet, 2 lbs)
1 Tbsp of grated ginger
1/3 c of Atkin’s Sugar-free syrup for pancake
3 Tbsps of butter; sliced into pcs
Instructions:
Have oven heated to 350 degrees F. Cut potatoes into inch-sized slices then lightly cook them in salted water that’s boiling for 8 mins ’til near tender. Have it drained very well.
Meanwhile, you heat the syrup & ginger together in saucepan. Let it cook for 3 mins over low-heat then set it aside once done.
Grease one 8×10-inch bake dish. You arrange a layer of potatoes then pour over the syrup. Dot w/ butter then cover w/ foil. Have it baked for 35 mins ’til soft.
