Cajun Chicken and Okra Recipe
Ingredients:
2 tsps of oil (canola)
A can of Cajun-style tomatoes (stewed, 14 & 1/2 oz); undrained & chopped
2/3 c of reduced-sodium chicken stock
1/4 tsp of flaked redpepper; crushed
2 Tbsps of water
1/4 tsp of hot redpepper sauce
1 & 1/2 Tbsps of Atkin’s Baking Mix
1 pack of frozen-cut okra; thawed
1/4 tsp of salt
2 garlic cloves; pressed
1 & 1/2 lbs of boneless, skinless thigh of chicken cut to 1 & 1/2-inch pcs
Instructions:
Have oil heated in large stick-free skillet placed over mid-heat ’til hot. You add meat then cook for 6 mns ’til evenly browned. Add the tomatoes w/ juices, stock, flaked pepper, salt & garlic then heat ’til boiling.
Have it covered then reduce the heat. Simmer for 10-15 mins ’til chicken’s cooked well. You add the okra then cover & simmer for 5 more mins ’til well-heated.
Combine baking mix & water in bowl, mix thoroughly. Whisk this mixture into chicken-mixture & simmer w/o cover for 2 mins ’til sauce is thick. Add the redpepper sauce.
