Caesar Salad Recipe
Ingredients:
2 pcs of white-bread slices (Atkins Bakery Country)
1/4 tsp of salt
2 tsps of olive oil
2 cloves of garlic; minced
3 pcs of anchovies (jarred or canned fillet); rinsed then patted to dry
1/4 c of mayonnaise
2 Tbsps of olive oil
1 Tbsp of juice (lemon)
1 tsp of Worcestershire sauce
1/4 c and 2 Tbsps of cheese (Parmesan); grated fresh
1 head lettuce (romaine, medium); whole or cut to small pcs
6 ozs of shrimp
1 pc of chicken (half breast); sauted & cut to strips
1 pc of canned tuna (in oil or brine, 6 ozs); drained
6 ozs of steak; pan fried steak, & sliced thinly
2 pcs eggs (hard-boiled); quartered
Instructions:
Preheat oven (350 degrees F). For the croutons, cut the bread to 1/2-inch squares. Then, toss w/ salt and oil. Spread the croutons onto a sheet then bake for 6 to 8 mins ’til golden browned. Croutons can be prepared a day in advance.
Meanwhile, process anchovies, mayonnaise, garlic, Worcestershire and juice in blender ’til smooth. Then, add oil together w/ 2 Tbsps of cheese; combine well. Toss the lettuce w/ mixture ’til coated evenly. Divide salad on different plates and top w/ croutons along with the remaining cheese.
Add 5 last ingredients to transform salad to a hearty-meal, if preferred. Good for 4 containing 11 g of carbs and 4 1/2 g net carbohydrates each.
