Burgundy Chicken Recipe
Ingredients:
2 Tbsps of oil (olive); divided
1/2 carrot (small); chopped
2 cloves garlic; sliced
2 lbs of skinless, boneless thigh of chicken
1/2 c of reduced sodium chicken stock
2 Tbsps of chopped parsley
1 onion (small); chopped
1/2 bayleaf
1 stalk of celery; chopped
2 lbs of diced ham (baked)
1/2 c of wine (red)
Instructions:
Have 1 Tbsp oil heated in large, thick skillet placed over mid-heat. You add the celery, carrots & onions then cook for 5 mins ’til soft.
You then add the ham & garlic then cook for 2 more mins. You transfer the mixture into small bowl. Have the other 1 Tbsp of oil heated then brown the meat.
Add bayleaf, stock & wine into skillet. You reduce the heat then cook for 35 mins ’til meat is cooked & liquids gets reduced.
You return the ham into skillet then mix thoroughly, continue heating for 5 mins. Sprinkle w/ parsley prior to serving.
