Breakfast Burritos Recipe
Ingredients:
4 pcs of Atkins tortillas (whole wheat)
1 Tbsp of peanut oil (or canola oil)
1 pc of tomato (small); diced
3 pcs of onions (green); chopped
1/4 tsp of pepper (black, freshly ground)
1/2 tsp of salt
8 pcs of beaten eggs
2 Tbsps of cilantro; chopped
1/8 tsp of cayenne pepper
1/4 c of salsa (green)
1/2 c of grated cheese (Cheddar)
4 oz of canned chiles (green); drained then chopped
Instructions:
Heat the oven at 325 degrees F. Heat the foil-wrapped tortillas inside the oven for 5 to 10 mins.
Heat the oil on a skillet above moderately high heat then add onions, tomato, chiles, salt, & pepper. Stir and saute for 3 mins. Push the mixture onto the edge of the pan then add the eggs with cayenne; cook for a min or two. Stir the mixture of vegetables onto the eggs.
Spoon the mixture onto the tortillas and sprinkle cilantro, two tablespoons of cheese, and one tablespoon salsa. Roll them up. Serve at once.
