Beef and Broccoli with Garlic Sauce Recipe
Ingredients:
1 lb of steak (beef); fat trimmed
1 Tbsp of oil (vegetable oil)
1/2 tsp of salt
1/16 tsp of pepper (white)
1-1/2 lbs of broccoli; pared, sectioned, and cut to 1-inch pieces
1/4 c of broth (chicken)
1 tsp of cornstarch
3 Tbsps of oil (vegetable oil)
1 tsp of sesame oil
1 Tbsp of garlic; chopped finely
1 tsp of ginger root; chopped finely
1 c of bamboo shoots (canned); sliced
2 Tbsps of brown bean sauce
Instructions:
Cut the beef into two inch strips, lengthwise. Cut the strips into one-eighth inch slices, crosswise. Toss the beef, a tablespoon of oil, pepper, and salt inside a bowl. Place inside the refrigerator, covered, for half an hour.
Blanch the broccoli. Combine cornstarch, broth, and sesame oil; mix thoroughly. Heat two tablespoons of oil on a skillet above moderate heat. Add pieces of beef then stir-fry for two mins till browned. Take the beef out from the skillet; set on the side.
Heat the skillet till (very) hot then add a tablespoon of oil. Add ginger, (bean) sauce, and garlic; stir-fry for half a min. Add (bamboo) shoots and stir-fry for a min. Add broccoli and beef; stir thoroughly and add mixture of cornstarch. Continue to cook for another 15 secs till sauce becomes thick, stir constantly.
