Basic Meat Sauce Recipe
Ingredients:
5 lbs of beef (ground)
2 pcs of carrots (small); chopped
6 – 8 pcs of onions (medium); chopped
A dash of salt
A dash of pepper
2 – 3 Tbsps of parsley; minced
1/4 c of olive oil
1 can of puree (tomato, sugar free, 15 ozs)
1 can of sauce (tomato, sugar free, 8 ozs)
1.5 c of broth or stock (chicken)
Instructions:
In deep pan (8 quarts), saute carrots and onion w/ olive oil ’til limp; make sure they are not browned. Stir parsley in then let go for a little while. Transfer everything into a large bowl then set it aside. Then, brown the beef inside pot w/ 1.5 pound per batch and transfer to previous bowl.
Next, add in tomato sauce, puree and broth of chicken to pot then stir well. Return all the ingredients to pot then simmer without cover for 30 mins. Season w/ pepper and salt for taste. Let mixture cool up to room-temperature and pack in 2 or 3-cup containers that can be frozen and label with date and put in freezer.
Makes 4-quarts; every 1/2 c contains 8 g of carbs.
