Atkin’s Soy Bread Recipe
Ingredients:
6 pieces of eggs (large, separated)
2 Tablespoons of cream (whipping)
1/4 teaspoon of cream-of-tartar
1 Tablespoon of gluten (vital wheat)
2 Tablespoons of sweetener (Splenda)
1/4 c of Soy Flour (Hodgsons Mills)
1 tsp of guaran (or guar gum)
Instructions:
Beat whites of egg along with cream-of-tartar inside a bowl till stiff. Combine egg yolks, sweetener, and cream on another bowl; fold two tablespoons of whipped whites then pour onto the mixture of whites, don’t fold it yet.
Combine gluten, guaran, and flour; add onto mixture of egg and fold gently. Place onto a (loaf) pan, coated with vegetable spray. Bake inside the oven at 350 degrees F for 30 t 45 mins.
