Atkin’s Pie Crust Recipe
Ingredients:
3/4 c & 2 Tbsps of Bake Mix (Atkins)
4 Tbsps of softened butter
3 oz of softened cream cheese
1 Tbsp of sour cream (dairy)
3 pks of sweetener (for sweet pastry)
Instructions:
Combine butter, bake mix, (sour) cream, (cream) cheese, and sweetener inside a bowl; beat thoroughly. Shape mixture to a smooth disc. Place inside the refrigerator for 20 mins till chilled.
Roll the dough in between 2 sheets of parchment paper; form a 12-inch round. Loosen the paper then replace and turn dough over. Continue rolling till dough becomes 1/8-inch thick. Loosen and replace parchment paper when necessary.
Get the paper then invert the dough onto a pie dish. Discard paper then crimp the edges attractively. Prick the base using the fork and place inside the freezer for half an hour.
Heat the oven at 425 degrees F. Gently cover foil on the crust. Bake for 10 mins. Lower down the heat to 375 degrees F then bake again for 10 to 12 mins till golden.
