Asparagus Tarragon Soup Recipe
Ingredients:
1 Tbsp of olive oil
3 c of chicken stock (reduced sodium, 14.5 ozs)
2 lbs of asparagus; sliced into 1-inch pieces
1 pc of onion (small); chopped
1/4 tsp of salt
3 pcs celery stalks; sliced thinly
3/4 c of creamer (non-dairy)
1/4 tsp of pepper; ground fresh
1 Tbsp of tarragon (fresh); chopped & divided
Instructions:
Heat the oil into a big pot on mid-high heat. Put in onion then cook for 5 mins ’til softened and not brown. Add in broth, pepper, salt, celery, 1/2 of tarragon and asparagus; bring it to boil. Reduce heat then simmer w/ cover for 20 mins, ’til asparagus becomes tender.
Puree the soup into batches inside blender ’til smooth and put back into pot. The, add the creamer in with the extra tarragon. Cook soup on mid-high heat. Good for 8, each containing 10 g of carbs, 8 g of net carbohydrates, 2 g of fiber, 5.5 g of protein and 0 g of fat
