Artichokes With Lemon Butter Recipe

Ingredients:

4 pcs of pointed-leaf artichokes (whole)
4 pcs of lemons; sliced
2 Tbsps seeds (coriander, whole)
1 pc butter (stick, salted); cut into 8 pcs
2 Tbsps of salt

Instructions:

Trim artichoke stems to 2-inch pcs. Bring water (4-quarts) to boil inside a big saucepot. Divide 3 pcs lemons into two and then squeeze the juice in water. Then, add in lemon, salt and seeds (coriander) then cook for 5 mins.

Add artichokes into the boiling liquid then cover w/ a plate (heavy) so artichokes be kept afloat. Boil for 15 mins or ’til a small knife easily comes off when inserted on part of stalk where stem meet bottom. Inside a separate bowl, soften butter inside microwave then mix the lemon juice from 4th lemon in.

Serve one artichoke (whole) per person, accompanied w/ a small saucer for butter then another container for peeled out leaves. To eat, peel artichoke and dip bottom of outer leaf into butter. Serves 4, each containing 13 1/5 g of carbs, 6 1/2 g of net carbohydrates, 7 g of fiber 28 1/5 g of fat and 315 cal.
