Almond Orange Cake Recipe
Ingredients:
1-1/2 c of almonds (toasted); ground into meal
1 c of sweetener (Splenda); save 1 Tbsp for crushing/dusting
1 tsp of baking powder (Calumet)
3 Tbsps of flour; sifted
2 Tbsps of almonds (toasted); sliced
1/2 c of cream
1 Tbsp of liqueur (orange); save 1 tsp for the cream
1 Tbsp of orange rind (optional)
6 pcs of eggs (large)
Instructions:
Preheat oven at 400 degrees F. Spray a nonstick vegetable oil onto a 9-inch round (springform) pan then turn the base plate upside-down.
Beat the eggs inside a bowl then gradually add Calumet and sweetener, while beating continuously. Combine almonds with flour; gently fold onto the mixture of eggs. Transfer onto prepared pan and cover with (baking) paper to cover over the batter.
Bake inside preheated oven for forty mins. Remove the paper then continue baking for another 10 mins till browned. Place back the paper then cook for some mins as necessary.
Take out from oven then let it cool on the rack. Invert on a serving platter. Combine the cream with little liqueur; mix thoroughly till stiff then pipe onto the cake. Garnish orange rinds and slices of almonds. Dust over the saved sweetener.
