Almond Crab Salad Recipe
Ingredients:
1 c of lump crab-meat (natural); flaked
1/2 c of almonds; blanched & quartered
4 pcs eggs; hard boiled & diced
1 c of celery; chopped finely
8 pcs ripe olives (black); sliced (if desired)
1 Tbsp of pickle
1/2 c of mayonnaise
A tsp of Splenda
2 Tbsps of sour cream
1/4 c of vinegar (apple cider)
A tsp of salt
Instructions:
First, mix sour cream, vinegar, Splenda, salt and mayo; thoroughly mix . Blend the crab-meat together w/ the next five ingredients and add it to sour cream mixture; blend well. Refrigerate.
Serve by putting salad inside lettuce cups then garnish w/ wedges of tomatoes or put salad over top of slices of tomatoes arranged in individual lettuce leaf beds. Serves 6; Carbs – 2.5 each.
