Almond Chocolate Chip Biscotti Recipe
Ingredients:
5 pcs of eggs (large)
1-1/2 c of sweetener (Splenda)
1 Tbsp of baking powder (Calumet)
1/3 Tbsp of cinnamon (ground)
1/3 Tbsp of vanilla extract
1/3 Tbsp of almond extract
6 c of flour (almond meal)
1-1/2 c of oil
1-1/2 c of pecans; chopped
1 pkg of almonds (slivered)
6 ounces of semisweet chocolate morsels
Instructions:
Combine the sweetener, Calumet, and eggs; beat thoroughly then add the cinnamon and extracts. Mix thoroughly then while beating continuously, carefully add oil. Add flour then mix thoroughly; fold in morsels and nuts.
Divide dough to four pieces then make them into logs on a jellyroll pan. Place inside an oven; bake, 350 degrees F for forty mins. Let them cool, at about 10 mins or more and slice thinly.
Arrange the slices on a baking sheet. Bake them, at about 12 mins.
Variation: Shape dough to four logs and slice while raw; bake them for forty mins at 350 degrees F.
