Almond Chicken Recipe
Ingredients:
4 skinned chicken-breast halves; boned
1/2 tsp of crumbled dry tarragon
1/4 c of grated cheese (Parmesan)
2 Tbsps of butter (unsalted)
Blanched flour (almond)
Lemon-wedges
1 egg (large); beaten
3/4 c of minced almonds
2 Tbsps of oil (olive)
Salt
Ground pepper (white)
Instructions:
Place meat in between 2 plastic-wrap sheets then pound lightly to even out thickness (1/2-inch thick each).
In small bowl, add tarragon into beaten egg then season it w/ pepper & salt. Separately combine cheese & almonds.
Heat the butter & oil in large skillet. Dust meat w/ flour then dip into eggs then into almond-cheese mix to completely coat the meat.
Transfer immediately into skillet then saute ’til golden-browned approx 1 & 1/2 mins in every side). Transfer chicken pcs into warmed plates then season w/ pepper & salt as necessary. Garnish w/ lemon-wedges.
