Almond Biscotti Recipe
Ingredients:
16 ounces of almonds (blanched)
8 ounces of flour (soy)
1 teaspoon of baking powder (Calumet)
1 teaspoon of salt
2-1/2 teaspoons of cinnamon (ground)
8 ounces of oil (peanut oil)
8 ounces of sweetener (Splenda)
3 pieces of eggs (large)
1 teaspoon of orange extract
1 teaspoon of vanilla extract
Instructions:
Preheat the oven (325 degrees F). Place half of blanched almonds inside the blender and blend till powdery like a flour; save the other half. Transfer the flour or processed almonds onto the bowl then add (soy) flour, Calumet, cinnamon, and salt; mix thoroughly then set on side.
Combine sweetener and oil then add eggs individually, while beating continuously. Add extracts and mix thoroughly; add onto the mixture of flour and blend thoroughly. Add in saved almonds then mix till dough becomes soft and oily.
Divide dough equally to four portions. Shape each portion to (small) loaf. Place them onto foil-lined and greased baking sheet.
Bake inside preheated oven for 40 mins. Take them out from the oven then reduce temperature into (200 degrees F). Slice the loaves to 12 pieces then place them back onto the sheet.
Bake again for 10 to 15 mins. Flip them over then bake for 10 to 15 more mins. Let them cool then store inside airtight jar.
